Garlic Butter Asparagus Recipe

10 oz young asparagus
2 tablespoons melted butter
3 cloves garlic, minced
Salt, to taste
Ground black pepper, to taste
Squirts of lemon juice, optional

Cut the bottom part of the asparagus stems, about 1/2 inch. Heat up a skillet on medium heat and add the melted butter. Saute the garlic until slightly browned before adding the asparagus. Toss with a spatula to combine well with the garlic. Add salt and ground black pepper, to taste. Add a squirt or two lemon juice, if using. Once the asparagus becomes tender and just cooked, remove from heat and serve immediately.

Asparagus, Mushroom and Cheddar Quiche

1 9-inch Pie Crust

2/3 cup chopped Asparagus

1/2 cup sliced Mushrooms

1 cup shredded Cheddar

5 Large Eggs

1/2 cup Heavy Cream

1/2 cup Whole Milk

1/4 teaspoon Salt

dash of Black Pepper

Heat the oven to 375 degrees. There is no need to precook the pie crust. If it is frozen let it thaw for 15 minutes first. Layer the asparagus, mushrooms, and cheese in the pie crust. Mix the eggs, cream, milk, salt, and pepper. Either beat them by hand for 2 minutes, or use a mixer for 1 minute. You want the eggs to be light and fluffy. Pour the egg mixture over the vegetables and cheese and into the pie crust. Fill the crust as much as possible, without letting the egg spill out. Bake for 35-45 minutes, until the center of the quiche has firmed up.

One-Pan Sausage with Sweet Potato and Asparagus

1 bunch asparagus, cut in half

10 ozsmoked sausage, sliced

2 cups sweet potato, diced

2 tablespoons olive oil

1 teaspoon thyme

1 teaspoon oregano

½ teaspoon paprika

Salt and fresh ground pepper

Fresh parsley (chopped) for garnishing

Preheat the oven to 400 degrees F. Line a sheet pan with foil or parchment paper. Add the sweet potato, asparagus and sausage on the sheet pan. Pour olive oil on the top of the sausage mixture and season with thyme, oregano, paprika, salt and pepper. Toss well to coat. Place in the oven for 15-18 minutes (If you prefer the asparagus more tender, you can place only the sausage and the sweet potato in the oven for 5 minutes and then add the asparagus). Remove from the oven and top with and top parsley.
