This time of year is just right for casual snacking and eating. One of the most popular snacks which has become a favorite is the Spinach-Artichoke Dip. I found a great recipe in Sunshine Elementary school’s “Cooking With Sunshine, Volume II”. Thanks to AMY COOKE for her take on this popular dip. 2 cans artichokes, drained & chopped; 1 package frozen spinach, thawed & drained well (I squeeze mine in double paper towels); 1 cup mayonnaise; 1 cup sour cream; 2 cloves garlic, minced; 2 cups grated Parmesan cheese. Mix all ingredients. Place in a baking dish. Cook at 350º for about 30 minutes. Serve with your favorite chip or cracker. It is simple and easy to make. Also, it has become one of the restaurants favorite appetizers.

How are you introduced?

In it, I write about what I do and who I am—but not the usual boring list of educational degrees and accomplishments, but more about me as a person; as a father of two daughters and that my wife boards horses and raises yellow Labrador retrievers.

A couple of weeks ago, I bought my wife a dozen roses. The occasion, you ask? ………Do you really have to ask? It’s called planning ahead or preventative maintenance. Some may even put it in the same category as early season preparation.
